Quinoa Tabbouleh

1cup quinoa
1.5 cups water
1 teaspoon coarse salt
2 cups loosely packed fresh flat leaf parsley (coarsely chopped)
½ cup coarsely chopped fresh mint
½ cup coarsely chopped fresh basil
¼ teaspoon ground pepper
1 teaspoon finely grated lemon zest
3-4 tablespoons fresh lemon juice (1-2 lemons)
1 medium cucumber, peeled, seeded and diced
¼-½ cup extra virgin olive oil
1 medium tomato diced
1 clove garlic minced

Rinse of quinoa before cooking to remove leftover residue.

Bring water to a boil, add quinoa and reduce heat to low setting and cover. It usually takes 10- 15min to cook. (water should be absorbed)

Add quinoa to chopped ingredients, toss together and serve.
