Jen’s Pumpkin Bread

1 1/4 C canned organic pumpkin
1/2 C coconut oil- heaping cup. Oil does not need to be melted- should be room temp.
2 eggs
1/4 C water
2-2.5 C almond meal
3/4 C dark agave nectar
¼ tsp of each of the following: nutmeg, allspice, cloves
1 T cinnamon

Optional additions: 1 C of one or a mixture of the following: chocolate chips, walnuts, almonds, and/or shredded coconut.

Instructions:
Preheat oven to 350 degrees.
Mix together all ingredients except for the almond meal until uniform.
Add the almond meal to mixture and mix until just blended- do not over mix. Stir in the additions
Bake for about 45-55 minutes (in a coconut oil-greased loaf pan) until middle is firm and edges are dark golden
